Halva Granola

This granola is everything I've ever dreamed of: crunchy, nutty, not-super-sweet and very satisfying (thanks to all the healthy fats!). I whip up a batch every weekend, using up whatever I have lying around in my pantry, but this particular nut-seed combo is my very favourite. You can make your own halva pretty easily - so long as you have a candy thermometer handy - or just opt for a store-bought version.

Prep Time: 5 minutes

Cook Time: 25-30 minutes

Yield: 1 big jar of granola


Ingredients:

  • 2 cups old-fashioned rolled oats

  • ⅓ cup sesame seeds

  • ⅓ cup coconut flakes

  • ⅓ cup flaked almonds

  • ¼ cup pumpkin seeds

  • ¼ cup chia seeds

  • ½ cup halva, crumbled

  • 1 Tbsp vanilla extract

  • ½ tsp kosher salt

  • ¼ cup mild-flavoured olive oil

  • ¼ cup runny tahini

  • Honey, for drizzling

Instructions:

  1. Preheat the oven to 325°F. Line a large baking sheet with parchment paper

  2. In a large bowl, mix together the first six ingredients. Set aside.

  3. In a medium bowl, combine crumbled halva, vanilla extract, salt, olive oil and tahini.

  4. Pour the liquid ingredients over the dry and use a wooden spoon or your hands to combine thoroughly.

  5. Spread granola out in an even layer on the lined baking sheet. Finish with a drizzle of honey to taste.

  6. Bake for 25-30 minutes until golden, stirring the granola halfway through to prevent burning around the edges.

  7. Let the granola cool completely on the baking sheet before transferring to an airtight container.
