Clementine Granita

Clementine granita served up in a clementine cup!



Ingredients:

10 clementines, rinsed and dried

1 lemon

¼ cup granulated sugar

¼ cup water

¼ cup sparkling water


1. Slice the top third of each clementine off with a sharp knife. Use a small spoon to gently remove the flesh from the skin. Place clementine cups and tops into the freezer.

2. Over a medium bowl, juice clementines and lemon using a sieve to catch any pulp or seeds.

3. Boil sugar and water over medium heat, then allow to cool. Add this to the juice along with sparkling water and stir to combine.

4. Pour into a shallow dish and freeze for 2 hours. Scrape with a fork and return to the freezer for another hour. Scrape again and then spoon into frozen clementine cups. Store in the freezer. Serve as is or with a dollop of whipped cream.
