Chocolatey Energy Balls

I like to finish every meal with something sweet and these chewy chocolate energy balls always do the trick. Like all of my favourite recipes, this one is extremely riffable, nutritious and satisfying. The best part is decorating the energy balls with anything that strikes your fancy. Play around! The world is your oyster!


TIP: If you want to make these into fancy little bars, you could roll the date-nut mixture out, chill it, slice it into fingers and then cover those in chocolate.

Ingredients:

  • 1 cup granola of choice

  • ¼ cup shredded coconut (Or hemp hearts or chia seeds if coconut isn't your thing)

  • ¼ cup nuts (Almonds, cashews, walnuts or pistachios)

  • 1 cup pitted dates (Must be soft!)

  • 2 Tbsp cocoa powder (I used Moonjuice's Cosmic Cocoa)

  • 1 Tbsp vanilla extract

  • ½ cup runny tahini (Or other nut butter of choice)

  • ½ tsp kosher salt

  • 100g (approx. ⅔ cup) dark chocolate, chopped

  • 1 Tbsp coconut oil

  • Toppings: Cacao nibs, bee pollen, slivered almonds, flakey salt, matcha powder, cocoa powder, dried flower petals, etc.

Instructions:

  1. Line a baking sheet with parchment paper and set aside.

  2. Add granola, coconut, nuts, dates, cocoa powder, vanilla extract, tahini and salt to the bowl of a food processor. Pulse everything together until well combined.

  3. With the help of a spring-release scoop, scoop out generous tablespoons of the date-nut mixture onto the prepared baking sheet. Roll them between your hands if you want them to be extra round. Repeat.

  4. Melt the chopped chocolate and coconut oil together in a small bowl. I like to do this in the microwave in 30 second bursts but you could also use a double boiler.

  5. Working one at a time, dunk the balls into the chocolate with a fork, tap off the excess and place onto the baking sheet.

  6. While the chocolate is still melty, top your energy balls with any of the suggestions listed above. Flakey sea salt is must.

  7. Once the chocolate has set, you can store your energy balls in an airtight container in the fridge.
