Chocolate Chip Cookies

Makes about 16-18 cookies with my Winco size 20 scooper (the one with the yellow handle).


Ingredients:

227g unsalted butter, room temp

75g granulated sugar

175g brown sugar

1 Tbsp vanilla extract

1 egg + 1 egg yolk, room temp

320g all-purpose flour

15g cornstarch

1 tsp baking soda

1 tsp kosher salt

200g chopped chocolate of choice - I like 70% but will also do a mix sometimes (plus any extra add ins like nuts, toffee, etc.)


Directions:

- Beat butter on medium until lightened

- Then add sugar and beat for 2-3 minutes

- Beat in egg, yolk and vanilla. Scrape down bowl.

- Sift together flour, cornstarch, baking soda and salt

- With mixer on low, add in dry ingredients until almost fully combined. Add chocolate and mix again until no streaks of flour remain.

- Scoop dough and squash slightly into a flattened puck shape. Top each cookie with an extra chunk of chocolate.

- Chill for 3 hours (overnight is best)

- About 15 mins before you are ready to bake, preheat oven to 375°F

- Bake 12-14 minutes until edges are golden but center is still a bit soft (I like to bang the pan a few times to deflate the cookies)

- Finish with lots of flaky salt!
